The main active substances are anthocyanins, resveratrol, polysaccharides, etc. Resveratrol can prevent the oxidation of low-density lipoprotein, so it has potential anti-cardiovascular disease, Anti-cancer, anti-viral and immunomodulatory effects. Red pigment is a very good natural pigment with good coloring property, good safety and strong water solubility. It can be widely used in beverages, cold drinks, roasted products, chewing gum, jelly, solid refreshing drinks and fruit wine, etc. It can also be used as an acid-base indicator.
